I have been craving s'mores for weeks now, but haven't had the time for the entire process. Gathering wood, building a fire and finding sticks to roast the marshmallows are all too much for a busy intern to do. So instead I decided to make a brownie version of the campfire classic.

I didn't exactly follow a recipe for this one. I referenced a recipe I found online, but I mostly just made this one up as I went along. That's the beauty of kitchen creativity!

Don't think these are any less messy than traditional s'mores, in fact they might be even messier. If you're worried about the mess I recommend eating them with a fork and remember they are best when served warm!

Just be prepared for a sweet overload. Definitely have a glass of milk on hand to wash this mess down.

Here's what you'll need:

1 1/2 cups graham cracker crumbs

1/8 cup sugar

1/8 teaspoon salt

1/2 cup unsalted butter, melted

4 squares unsweetened baker's chocolate

2 sticks unsalted butter, melted

2 cups sugar

4 eggs

2 teaspoons vanilla

1 cup flour

1 teaspoon salt

3/4 bag of mini masrhmallows

3 graham crackers

1 bar of Hershey's Milk Chocolate

1. Prepare the pan

Preheat the oven to 350 degrees. Line a 9x13 inch pan with aluminum foil. Grease the foil with cooking spray or butter, set aside.

2. Make the crust

Combine graham cracker crumbs, sugar and salt in a bowl. Add melted 1/2 cup of butter and mix together with a fork. Press mixture into the foiled pan. Bake for 15 minutes.

3. Make the brownie batter

Melt the two sticks of butter and chocolate squares in a large bowl in the microwave. Add in sugar and vanilla. Whisk in the eggs. In a separate bowl combine flour and salt. Fold the dry mixture into the chocolate. Pour batter over top of graham cracker crust and back for 25-30 minutes.

4. Top the brownies

Remove the brownies from the oven and top with the mini marshmallows. Set the oven to the broil setting. Put topped brownies back in the oven for 1-2 minutes. Be careful to watch them, the marshmallows will brown up quickly.

5. Add the graham cracker and chocolate pieces

As soon as you remove the brownies top the marshmallow with the pieces of graham cracker. Break the chocolate bar into squares and add them as well. They will get nice and and melty, just like actual s'mores.
